Three-Michelin-starred Smyth, only one of 14 restaurants in the country honored with such a distinction, journeys creatively to the corners of the country to elevate the North American farmers, fishermen, purveyors and makers in food today who operate at the peak of their season and height of their craft. With a joy for discovery, the restaurant is an ever-changing expression of pristine products so that every exceptional experience feels like a first.
Husband-and-wife chefs John Shields and Karen Urie Shields rely on 30 years of culinary experience, including time at revered fine dining restaurants Alinea, Tru and Charlie Trotter’s. Their balance of culinary excellence and genuine warmth creates a moment that is both excitingly new and comfortable.
We are able to accommodate a range of dietary restrictions with sufficient notice. Due to the composition of the menu and the foundational role of certain ingredients in our preparations, we are unable to safely accommodate the following: Vegan diets, Allergies to eggs in all forms, Allergies to mushrooms, Dairy-free diets when clarified butter is not permitted, Sunflower seed or sunflower oil allergies, Allergies to all seafood or seaweed.

This is an upgraded menu experience, offered at a prime time and includes additional courses. You will also have the opportunity to meet our talented chefs as they present some of the dishes.

Wine Director Louis Fabbrini mirrors Chef John Shields’ ingredient-focused philosophy by sourcing small-production, regenerative wines that favor storytelling and emotional cadence over traditional rules. By prioritizing minimal intervention and timing, these pairings act as a seamless continuation of the menu rather than a simple complement. Guests are encouraged to engage with Louis to uncover the unique history and intention behind every pour in this three-Michelin-starred experience.
